Resumen: Quantitative structure analysis using image analysis 1s fundamental for the comprehensive understanding of many physicochemical phenomena that occur in foods at scales below 100 micrometers. However, food structures are complex and heterogeneous and images usually represent only a small portion of the food sample under observation, consequently the representativeness of the analysis is not assured.
